Lychee Sweet & Sour Chicken

INGREDIENTS

Marination

300g Chicken Meat (cut into small cubes)
Salt Pepper and Sesame Oil to taste

Batter

50g Prima Plain Flour Plus
20g Corn Flour
2 tbsp Rice Flour
1 no Egg
20g Water

Sauce

5 tbsp Tomato Sauce
2 tbsp Apple Vinegar
3 tbsp Sugar
3 tbsp Lychee Juice
1 tbsp Corn Flour

Toppings

½ pc Green, Red and Yellow Capsicum (cut into pieces)
1 pc Big Onion (cut into thick slices)
6-8 pcs Lychee

PROCEDURE

  1. Marinate chicken meat for 2 hours.
  2. In a mixing bowl,add ​batter and meat. Mix Well.
  3. Deep fry meat until it turns golden brown.
  4. Cool the meat and fry it again for 5 seconds until crispy. Set aside.
  5. Add toppings and cook for 1 minute in a wok.
  6. Add sauce and simmer till sauce thickens.
  7. Add in meat. Stir-fry till meat is evenly coated with sauce.
  8. Lychee Sweet and Sour Chicken is ready to serve
