Artisan Pizza

INGREDIENTS

200g Prima Artisan Bread Flour
4.6g Salt
140g Water
4g Instant dry yeast
150g Bacon
210g Sour Cream
100g Sliced Onions
1.5g Coarse Black Pepper
1g Nutmeg Powder
4g  Fresh Thyme (excluding stem)
240g Mix Cheese (mozzarella and cheddar)

PROCEDURE

  1. Cut bacon into bits, grease frying pan and stir fry bacon bits till light brown. Transfer to a bowl to cool.
  2. Sauté sliced onions on grease pan till slightly light brown.
  3. Mix Prima Artisan Bread Flour, yeast and water for 1 minute on low speed in a mixing bowl.
  4. Add salt and mix for another minute on low speed, then change to medium speed for 3 minutes or until well combined.
  5. Rest dough on a container and cover with a damp cloth for 35 – 40 minutes.
  6. Divide dough into 50g pieces and pre-shape to boule. Rest the dough at ambient (28 ̊C) for 15 – 20 minutes.
  7. Flatten dough with a rolling pin and dust flour to prevent dough from sticking onto the table. Pin to round shape of about diameter of 15 – 16cm.
  8. Use a fork to poke a few holes on the dough surface. Place 35g sour cream and spread evenly on dough, leaving an allowance of about 1cm all around with no spread. Place 15g bacon, 13g sautéed onion, a pinch of nutmeg and black pepper with 0.5g fresh thyme evenly on cream. Add on 40g cheese mix on the surface and bake.
  9. Preheat oven with pizza stone or baking pan.
  10. Spray water on the surface of the pizza and bake at 250 ̊C in oven with fan for 8 -10 minutes.
