Sourdough: Crafting Healthier Bread From Scratch

Sourdough bread has made a remarkable comeback in kitchens worldwide, and it’s easy to understand why. Its tangy flavour, hearty texture, and rustic appeal make it a hit with bread lovers everywhere. But it’s not just about the taste; sourdough offers impressive health benefits, especially when you use high-quality wholegrain flour. Whether you’re a seasoned baker or a beginner, sourdough is a nutritious and satisfying addition to your daily bread routine.

The Health Benefits of Sourdough

Sourdough stands out as more than just a tasty bread; it’s a fermented grain product full of health benefits. The fermentation process helps break down gluten, making it easier for your body to digest. For individuals sensitive to gluten, sourdough can offer a more comfortable alternative, although it’s important to note that it’s not gluten-free. Moreover, sourdough has a lower glycaemic index (GI) than regular bread, which can help with better blood sugar management.

This means it can help manage blood sugar levels more effectively, making it an excellent choice for those focused on healthier eating. This natural breakdown process also increases the absorption of crucial nutrients like iron, zinc, and magnesium, making these essential minerals more accessible for your body to utilise. Selecting the right flour is essential—wholegrain flour, which is easy to find, enhances the nutritional benefits of sourdough, as it holds onto more nutrients than refined flour options.

How to Make Your Own Sourdough Starter

Making a sourdough starter from scratch might sound intimidating, but it’s actually quite simple. With just a few basic ingredients, a little patience, and a passion for healthier baking, you’ll be on your way. Here’s how to begin:

  • Wholegrain flour: Start with whole wheat or rye flour, as these options are rich in natural wild yeast and bacteria, essential for kickstarting the breakdown process.
  • Water: Use filtered or non-chlorinated water, as tap water often contains chemicals that can hinder your starter’s growth.
  • A clear glass jar: This allows you to easily monitor your starter’s progress over time.
  • Kitchen scale: Precision is vital in baking, so a scale will come in handy.
  • Cheesecloth or kitchen towel: Loosely cover the jar to let air circulate while keeping dust out.

Now, let’s dive into the step-by-step process:

Day 1

In a glass jar, mix 50g of flour with 50g of water. Stir until well combined, then cover it loosely with a kitchen towel. Place the jar in a warm spot, ideally between 21°C and 24°C, and let it sit undisturbed for 24 hours.

Day 2

At this stage, you may not notice much change, and that’s perfectly normal. Discard half of the mixture (about 50g), then add another 50g of flour and 50g of water to the remaining starter. Stir well and return it to the warm spot.

Day 3-7

Continue the daily feeding routine. Each day, discard half of the starter and refresh it with 50g of flour and 50g of water. You should start to see bubbles forming and a sour smell developing—both signs that your starter is thriving! If it seems slow to react, don’t worry; some starters just take a bit longer to mature.

Day 7 (or when active)

By now, your starter should be bubbly and have a pleasant sour aroma. Once it rises within a few hours of feeding, it’s ready for the baking process. Congratulations! You’ve successfully created your very own sourdough starter culture from scratch.
